There are a few recipes you come across while surfing that develop an instant urge to try. It isn't the impatient need to savour but to t.r.y (and b.l.o.g right away if you are an obsessive blogger)
Sometimes it's because of the simplicity of the recipe; at times being classic and mostly we get hooked because of its elegance and the way it is presented.
Date & Cocoa Raw Truffles are one of those I came across a while back and couldn't wait to try (and blog) because of its simplicity, elegance, being classy and classic presentation.
I fell in love with pictures, the truffles wooing me sitting on a crude background on a rusty finish. I couldn't take my eyes off and I felt truffles can't look better than this!
All the years of my blogging, I had tried recipes from other blogs and my blogger friends'. Even though they were recreated in my space a bit with my own touches and creativity while I viewed them through my lenses. But this one paralysed my neurons! I could hardly think of how to photograph them placed on a different background than where I came across the irresistible treat!
The combo of dates and cocoa, blended to perfection seemed and looked sexy!
This happened with the ingredients and the method part as well. I am confused where to add my notes while experimenting them. Such crisp write up!
So, to sum up, this is a carbon copied version of the recipe I bumped on!
Date & Cocoa Raw Truffles
Adapted verbatim from Chimayie's
Ingredients:
10-15 good quality soft dates
2 tbsp unsweetened cocoa powder
1-2 tbsp of olive oil/coconut oil/rum/vanilla (optional)
some unsweetened cocoa more to roll the truffles.
De-seed the dates and process them with cocoa powder into a smooth paste. If it’s too hard (depends on your dates) use a bit of oil or alcohol to help it come together. Once done, scoop small bits out with a spoon and roll it between your palm to make truffles. If you feel the mix sticky, refrigerate for 15-30 minutes or/and rub coconut oil on your palms. Roll them over some unsweetened cocoa and store in an air-tight container. Simple, right?
Notes:
Use the best quality dates you have. They need to be soft and sweet. We add no extra sugar.
Use good quality cocoa.
Add alcohol of your choice to make boozy truffles.
Add different spices to change flavors.
Add nuts to the mix if you like, try almonds, cashew, pistachio, walnuts etc
I used 12 not-so-large dates which yielded 9 truffles and have rolled them over cocoa.You can try coconut, sesame, finely ground nuts etc for different colors and flavors.
The '2 ingredient-2 minute away treat' for Christmas. Healthy too!

I think the idea of getting a bit of Baileys Irish cream mixed in the truffle is very appealing, esp., for Christmas parties. But, I was wondering if you have any thoughts on how we might "fill" the truffles with the cream like we find in the truffles at the shops. Like, when you bite into the truffle you get a bit of irish cream into your mouth (yum). I am thinking, may be to press a dent, fill with a 1/4 tsp of cream, then close it back, roll it on the cocoa powder and chill them in the fridge. Thought I will ask if you have any other idea...
ReplyDeleteIn fact I wanted to make them too :) but we dont get heavy whipping cream herethough amul cream with 25% fat is available. so was a bit apprehensive and ended up with this one. I am personally not a fan of dates..so dates all whipped up in a gooey state was not quite welcoming to me (matter of factly) but with the choc combo it was fine. ;)

DeleteBharathy, thanks for getting back to me with the suggestions. I am going to a series of Christmas parties and got hold of Baileys on sale (buy 1 get 1 free). I drink rarely at social-settings. So thought up the idea of chocolate truffle with Baileys to finish of the bottles. Totally with you on the dates part! I am thinking of trying one of these

They do use double cream if you want to try (without Baileys that is). Will let you know how they turn out. At least I will not lack for guinea pigs. Baileys, chocolate and cream combo is sure to be a great treat for the holidays.
